Pepper Peppermints

A classic piece of Heston creativity, combining flavour-pairing, culinary wordplay and nostalgia for a certain ultra-thin, after-dinner chocolate square.

Exploring the zingy affinity of mint and varieties of pepper, Heston and his lab team were excited to discover that they have several compounds in common – limonene, pinene, beta-caryophyllene and eucalyptol – but in varying amounts. It led to the development of these delicately elegant chocolate wafers featuring the traditional peppermint filling along with pink, black, long or red szechuan pepper for a taste bud dance of citrus, warmth, floralness, earthiness, fruitiness, gentle heat and a bit of a tingle.
