The addition of acid, Heston discovered, can blur the borderlines between vegetables and fruit. (A counterintuitive flipping between two states that reminded him of quantum physics.) So he created pastilles that seem to switch between two flavours - beetroot/blackcurrant, Romanesco pepper/rhubarb and butternut squash/apricot.
